Healthy lunch: two tasty low-calorie soup recipes

Working out to lose weight and get fit might get a bit frustrating at some point. You can feel like you're not progressing enough or not quickly enough. We know this feeling, but how do you solve it, right? Well.. Never give up, keep working out regularly. You could've guessed that answer, isn't it? Bodyweight Workouts wants to help people with not only providing bodyweight workout plans, but also provide nutrition tips and recipes to speed up your process! We've created two healthy and low-calorie soup recipes you can eat for lunch or dinner. 

There millions of different soup recipes all over the internet. Lots of them are low in calories and sometimes also very healthy. We've created two quick and very easy soup recipes ourselves. You can cook them in about 30-40 minutes! A tomato soup and a broccoli soup. Both dishes are very healthy, low in calories and super tasty!

Bodyweight Workouts healthy low-calorie tomato soup:

Prep: 10 minutes

Cook: 25 minutes

Servings: 4

Ingredients:

  • 750 grams tomatoes
  • 1 onion
  • 1 large carrot
  • 2 table spoons olive oil
  • 50 grams tomato puree (canned)
  • 1 clove garlic
  • 1 table spoon Italian spices
  • 1 liter beef broth
  • 300 grams beef soup balls
  • salt and pepper to taste

Instructions:

1. Cut the tomatoes in pieces and cut the onion and carrot in small cubes.

2. Pour the olive oil in a saucepan on low heat. Add the tomato puree and stir for 1 minute. 3. Squeeze the garlic with a garlic press above the pan and then add the onion, carrot and a bit of salt and pepper. Bake gently for about 5 minutes.

4. Meanwhile cook 1 liter of beef broth. When the broth is cooking, add it, along with the tomatoes to the vegetables. Let it cook for 15 minutes. (add some salt and pepper to taste)

5. After 15 minutes, take the soup off the heat and with a hand mixer or blender puree the mixture until it's smooth. Return to the saucepan and reheat.

6. Add the soup balls to the soup and cook for another 3 minutes.

7. Plate it up! (Tip: add 1-2 slices of toast)

Bodyweight Workouts healthy low-calorie broccoli soup:

Prep: 10 minutes

Cook: 30 minutes

Servings: 4

Kcal: +- 80

Ingredients:

  • 1 package of chopped frozen broccoli (or 1-2 fresh broccoli)
  • 2 potatoes
  • 1 large onion
  • 1 clove garlic
  • 4 table spoons olive oil
  • 1 liter chicken broth
  • 400 grams chicken breast
  • salt and pepper to taste


Instructions:

1. Peel and chop the the potatoes, onion and garlic. (and the broccoli if needed)

2. Pour half of the olive oil in a saucepan on medium heat. Add the onion and garlic and saute until they're tender.

3. Mix in the broccoli, potatoes and chicken broth. Reduce the heat and and let it cook for about 15 to 20 minutes.

4. Meanwhile chop the chicken breast in cubes. Put a frying pan on high heat add the rest of the oil. Throw in the chicken and add some salt and pepper to taste.

5. After 15 minutes, take the soup off the heat and with a hand mixer or blender puree the mixture until it's smooth. Return to the saucepan and reheat.

6. To plate up: take 4 soup bowls, put in the baked chicken, pour in the broccoli soup and enjoy! (Tip: add 1-2 slices of toast) 

These recipes will help you lose weight and help you eat less calories during lunch and/or dinner. Both dishes are around 90kcal per serving. (based on a 2000 calorie diet)
